Lentils and potatoes
Ingredients

  • 1 cup finely chopped red onion
  • 4 tablespoons olive or any other cooking oil
  • 2 Roma tomato, diced
  • 1 tablespoon minced garlic
  • 1 teaspoon minced ginger
  • 2 tablespoons Berbere spice
  • 2 small Yukon gold potatoes, diced
  • ½ cup red lentils, rinsed
  • Salt, to taste

Green lentils in Turmeric sauce
Ingredients

  • 1/2 cup green lentils / French green lentils
  • 1 small yellow onion, finely chopped
  • 3 tablespoon olive oil (or any other oil)
  • 1 1/2 tablespoons minced garlic
  • 1/2 tablespoon minced ginger
  • 1 teaspoon turmeric
  • salt to taste
